Lasagna Roll Ups.  My family commented that this was the best lasagna I had ever made!  I made a few mods to the recipe: used 1.25lbs ground beef, because that was what size I bought, used 2 8oz cans of sauce and cut out the 1/2 cup water. Forgot the Parm cheese, but put it on the table for personal choice.  I made 12 rolls, the rest of my noodles were broken, and still had sauce left over for another meal. by Sexiazzliz

... sweet potato almond butter muffins...I followed the recipe to a t the first time around and they were delicious. I made them tonight for the second time and made a few changes. I added raisins, instead of swirling the almond butter on top of each muffin before baking, I melted it and added it to the batter. I also used soy milk because I didn't have any almond milk. OK... sprayed some no-stick spray on the baking pan you see in the picture. Browned a pound of ground beef with 1/2 diced onion and some chopped green onions. Drained it. Added about a cup of water and a packet of Taco Bell taco seasoning mix. Got a 27 oz can of "El Mexicano Chili for Rellenos" and drained them, rinsed them, pulled them into small strips with my fingers. (Fresh Poblano peppers would probably make this even better). Combined 4 eggs, 2 tablespoons all-purpose flour, salt, pepper, fat-free milk (would have used whole milk but we had fat-free milk on hand) in a separate dish and whisked that all together. Added a small can of green chilis to that flour/milk mix along with another 1/2 diced raw onion and a little more chopped up raw green onion. Put a layer of chilis on the bottom of the baking pan shown in the picture. Ladel some of the egg/milk/onions mixture on top. Add a layer of shredded cheddar cheese and "mexican blend shredded cheese". Now add another layer of the chilis... another layer of egg/milk/onions stuff, another layer of shredded cheeses. I made a total of 3 layers like this. Baked at 350 for about 45 minutes, then added a small can of sliced black olives and put it on a high broil for 4-5 minutes. Let it sit 20 minutes or so and serve it up. We topped it with sour cream and some homemade poblano/jalapeno hot sauce I'd made last weekend.  Oh yeah... of course I spooned in some of the seasoned/browned ground beef on each of the 3 layers, too... heh heh... kind of an important part of the recipe.  One other thing...  I also tore up two large flour tortillas into bite-sized pieces and added those in to the dish as I was building up the layers. by dollie

Homemade Corn Dogs @Caitlin Burton Burton Burton Burton Burton Brunquell  I did this with my kiddos tonight. I didn't have sticks so we cut the hotdogs and made mini-corn dogs.  It worked great. One note though: after drying off the hotdogs, I put them in a bag full of corn meal and shook it until they were coated. Because before doing so, the batter just slid right off the hot dogs. I am pretty sure that I have discovered the KFC secret recipe! It is DEAD ON! It is also baked...not fried and there isn't any skin! So you get to enjoy the taste of the seasoning, instead of pulling it off because of the slimy skin!    This is super easy and you are TOTALLY going to love it!
