Might make a good camping meal!  1. Thinly slice 2 red skins/plate and place in pie pan. 2. Make 6 Patties (1.5 pounds 85% lean ground beef, 2 eggs, 1 1/2 tsp. Dijon, 1 Tbsp. Oven baked smashed potatoes! So easy and so good. I give them a headstart in the microwave. Then, transfer to lightly oiled pan, smash with a fork, dot with butter and a bit of my favorite Greek olive oil. Sprinkle on salt and pepper, bake until semi-crispy and browned on top.
