Coconut Banana Bread: I used the basic recipe to create an allergy friendly version. Here's what I did: 1) use a GF all-purpose flour,  2) increase the baking powder by 1 tsp.,  3) Substitute almond/coconut milk instead of milk;  4) Use 2T. ground flax seed and 6T. Warm water for eggs. 5) Puree 1-3 banana's (depending on taste) as the first part of the milk and top it off with milk. 6) Use Earth Balance (soy/dairy free) buttery spread or oil in place of butter. by ana
