Caramelized Onions and Mushrooms Recipe: 10 oz of mushrooms, wiped clean and sliced 1/2 a softball size Vidalia onion Salt & Black pepper to taste 1 tbs butter Saute onions first, till caramelized, then remove from pan and saute mushrooms in a single layer to avoid steaming them.  If you cut the mushrooms thicker, you can develop a nice sear on them.  Keep turning the mushroom pieces till the desired color - a rich caramel with dark but not by annmarie
