Taco Soup. 1 lb lean ground beef, 2 cans rotel, 1 can corn drained, 1 can black beans drained, 1 packet taco seasoning, and 1 packet ranch dip mix. Brown beef, drain fat. Add remaining ingredients and bring to a boil. Lower heat to simmer and cook for at least another 30 min, stir occasionally. White Queso Dip (no Velveeta)  16 ounces cream cheese, softened  1/2 cup sour cream  2 cups grated Jack cheese  2 cups grated Parmesan  1 can Rotel Diced Tomatoes with Green Chiles, drained  1/2 teaspoon salt  Add all of the ingredients to a large bowl and mix well to combine.
